Loaded Smothered Beef Burritos

Ingredients

4 tbsp Olive Oil
1 lb Ground Beef
1 Onion (diced)
1 ½ tbsp Chili Powder
1 tsp Ground Cumin
1 tsp Garlic Powder
1 tsp Smoked Paprika
¼ tsp Salt
¼ tsp Pepper
½ tsp Crushed Red Pepper Flakes
7 Large Tortillas
1 Can Refried Beans (warmed up)
3 cups Mexican Shredded Cheese (divided)
1 Can Red Enchilada Sauce (15oz)
Cilantro (optional garnish)

Directions

Combine the chili powder, ground cumin, garlic powder, smoked paprika, onion powder, salt, pepper, and crushed red pepper flakes. (makes about 4 tablespoons).

Preheat the oven to 350F.

In a large skillet add 2 tablespoons olive oil. Add ground beef and onion and cook on medium-high heat until the beef is cooked through and the onions are soft and translucent.

Add the seasoning mix from step 1 and stir to combine. Take the skillet off the heat and set aside.

Add 2 tablespoons of olive oil into a large oven proof dish.

Lay a tortilla out. Smear 2 tablespoons of the refried beans down the middle. Add 2-3 tablespoons of rice down the center. Top with beef and cheese. Roll up the burrito. Place in the oven proof dish, seam side down. Repeat for the remaining tortillas.

Bake in the oven for about 25 minutes. Remove from oven and drizzle the enchilada sauce over all the burritos and sprinkle the remaining cheese over top of the burritos. Return dish to the oven and bake for another 10-15 minutes until the cheese is lightly bubbling.

Serve. You can top with cilantro if wanted.
